A Small Sheet of Nori
How a dark, crisp wrapper changes the texture and character of a mouthful.

Nori can be easy to overlook because it often holds other ingredients in place. Around salmon roe or sea urchin, its dark edge frames the brighter topping. But it also brings its own aroma and texture, making the wrapper part of the experience.
Notice the first contact
When a piece of gunkan reaches you, the nori is one of the first things you feel. Its texture sits against soft rice and a tender topping. That contrast makes a small piece more interesting than its size might suggest.
Try giving the whole mouthful your attention. The topping may be the ingredient you ordered for, but the balance depends on what is around and beneath it. Nori is one of the reasons two similarly sized pieces can feel quite different.
A piece with its own timing
Like other small dishes at the counter, gunkan is best enjoyed without a long wait. Have your conversation, watch the preparation, then make room for the piece when it is served. You can return to the story after the bite.
That does not mean dinner needs to feel hurried. It means the quiet pauses and the moments of eating have their own rhythm. A good counter evening gives you both.
Choosing what to explore
Our menu includes ikura gunkan and uni. If you are unfamiliar with either, ask about their flavour and texture before ordering. The same nori wrapper carries very different centres, and that difference is a useful way to discover what you enjoy. A single piece can be enough to begin.
