The Details Beside the Sashimi

Wasabi, daikon and shiso are part of the plate’s balance, not simply its decoration.

A sashimi plate draws your eye towards the fish. Around it, there may be wasabi, shredded daikon or a leaf of shiso. These quieter details give you ways to change the next bite without losing sight of the main ingredient.

Begin with the fish

Try a piece as it is first. Notice its texture and the flavour that remains after you swallow. Then experiment with a small amount of an accompaniment. You will have a clearer sense of what it adds than if every bite begins heavily seasoned.

There is no test to pass and no single correct amount to enjoy. Starting gently simply gives you room to adjust. A small plate can offer several different mouthfuls, even when the ingredients stay the same.

The quieter contrasts

Daikon brings a crisp bite beside soft fish. Shiso adds an aromatic note. Wasabi gives a more direct accent. They do different jobs, and you do not need to combine them all at once to appreciate the plate.

It is worth asking your server how the kitchen has prepared the dish. A sashimi selection and a dressed cold plate may arrive with different seasoning already in place. What belongs with one is not necessarily needed with the other.

A conversation at the table

Sharing sashimi is an easy way to discover different preferences. Someone may enjoy a richer piece; another may return to the white fish. Talk about what you notice rather than searching for expert descriptions. Often the most useful observation is simply which bite you would like again.
