The Pleasure of Waiting for Rice
Donabe rice asks for a little planning and gives the table a warm, generous final savoury course.

Some dishes are chosen in the moment. Donabe rice is worth thinking about earlier. Our clay-pot rice is cooked to order and designed for two, bringing rice and the season’s fish together in a dish that feels naturally suited to sharing.
Order early, enjoy it later
Tell your server near the start if you would like the donabe. It gives the kitchen time to fit it comfortably into your evening. You can enjoy other dishes while it cooks, without having to hurry when the rice reaches the table.
This small piece of planning changes the feel of the meal. Instead of adding something only because you are still hungry, you have a dish to look forward to. The last savoury course becomes part of the evening’s shape.
A different place for the grain
Rice beneath nigiri is seasoned and shaped for a single bite. In a donabe, it takes a more generous role. You have a bowl in front of you, time to notice the aroma, and room to return for another spoonful.
The fish makes it a dish of its own rather than a neutral accompaniment. Ask what is being used when you visit, since the menu follows the season. It is also a good moment to discuss the size of the rest of your order.
Leave a little room
If you are sharing rice, you may prefer fewer plates beforehand. Your server can help judge the balance without turning dinner into arithmetic. The aim is a comfortable finish: enough appetite to appreciate the rice, and enough time to enjoy it while the conversation continues.
